    Chef Alfonso Lopez De Anda, a mestizaje of Italian & Zapotec blood serves contemporary Indigenous plates, using methods & ri...tuals in the preparation of his foods, ancestral to Oaxaca, Guanajuato, Yucatan, and other regions. His signature dish, "Pastel Nanishe" (meaning delicious in Zapotec) is a layered dark mole casserole of 40 ingrediants. Other specialties include: Tlayudas, a type of Prehispanic Pizza, his Indigenous Mesquite Grill on Saturdays, where all meats, Tasajo (Oaxacan Beef Jerky), Arrachera, Chicken, Chorizo de Pavo are marinated & wood fired, the Indigenous way.
